Featured episodes include Thanksgiving and Christmas specials, famous chefs including Leah Chase and Paul Prudhomme, and a healthy dose of Louisiana history and culture.

In this episode from the “Louisiana Cooking with a Change of Heart” series of “A Taste of Louisiana” from February 15, 2003, Chef John Folse tours the Fresina Pasta Company in Baton Rouge, Louisiana, with owners Phyllis Fresina and Buster Fresina. Phyllis also shares her family recipe for Lasagna. In his kitchen, Chef Folse prepares a healthier version of the Lasagna, as well as Eggplant Caponata.
